| OUR PHILOSOPHY of winemaking is simple: ripe fruit, gentle handling, attention to detail, timely intervention, and judicious blending. There is no particular secret—we all know that the key lies in the grapes. Each facet of the vineyard is picked at the optimum moment, and each lot is vinified separately and finishes its fermentation in the barrel. Following the careful evaluation of each lot, trial blends are prepared and, after many tastings, the final blend is made in the spring following the harvest. Cain Five is aged as a blend so that all the components can meld to form a complete whole.
CAIN PRODUCES three wines: Cain Five, Cain Concept, and Cain Cuvee. They are all Cabernet blends, but with different styles. With our Cain Cuvee we seek a smooth, immediately approachable, versatile style: a bistro wine. Cain Concept is sourced from the benchlands of the Napa Valley, providing us with grapes that produce a luscious, silky wine that is at once imminently drinkable and worthy of aging.
